Processing of Tomato Ketchup:

Tomato Ketchup is not only made by raw tomatoes but by mixing tomato paste with water, sugar, vinegar, salt, and other food preservatives so that it can stay fresh for months.

The Process takes the following steps for Tomato Ketchup Processing Plant:-

  • Firstly, fresh raw tomatoes are taken and then wash them properly to take off all the germs.
  • Secondly, we have to make the tomato paste and for this, the tomatoes are heated to around 90˚C temperature which can be used for making pulp and this method is known as the “Hot Break” method.
  • Within this method, pectin that is found naturally in fruits is preserved but the odor is lost and the color becomes fade than the natural one.
  • The premium quality ketchup with high solids content attains its viscosity from the combination of water retention of the fibrous strands in the paste and the gelling effect of the pectin.                                                   
  •  Once mixed, the product is passed through a high-pressure homogenizer to obtain the required consistency and viscosity of the paste which can also be used to increase yield as a thicker product with a lower solids content.
  • After that, the mixing apparatus must be capable of dispersing powdered ingredients into the water to form an unaccumulated product.
  • In this way, tomato ketchup is prepared and then it is pumped into the buffer storage vessel which is then transferred for packaging purposes.

THE PROBLEMS OF TOMATO KETCHUP PLANT:

  • It takes a very long time for mixing the ingredients in order to get complete dispersion.
  • We require a uniform mixture which can be only done by a homogenizer.
  • Some of the particles of the mixture get stick to the walls of the container and the parts of the mixer.
  • Formation of lumps by adding preservatives that can’t easily break down.
